Warm Cruciferous Crunch Slaw

Don't you love when you can whip up a super delicious healthy salad and it's all from Trader Joes?

I made this today and it was amazeballs! I wasn't in the mood for meat or anything too heavy and this TOTALLY hit the spot! I love that it's so colorful too! 

Warm Cruciferous Crunch Slaw

Ingredients:
* 1 bag of Trader Joe's "Cruciferous Crunch" mix ( this is a combo of shaved brussels sprouts, kale, green cabbage, red cabbage and broccoli)
* 2 tsp organic extra virgin olive oil
* 1/8 tsp sea salt
* the juice of 1 lemon
* organic dried cranberries
* dry toasted & sliced almonds
* shaved parmesan, romano and asiago cheese

 

 

Directions:
In a large skillet over medium high heat add olive oil. When heated, add cruciferous crunch and sauté for 3 minutes until slightly wilted.
Remove pan from heat and pour contents into a large bowl. Add salt and lemon juice and toss until coated. Divide the greens among two plates and top with a handful of dried cranberries, almonds and cheese. Serve warm.

* you can also just add everything to a bowl and toss then serve which I did today and in this picture :)
