5 Minute Keto No Bake Cookies

If you're like me you get a sweet tooth from time to time! Since drinking ketones it doesn't happen as much but if and when it does I whip up these 5 minute cookies and they totally do the trick! Can I get a "Woohoo!"? If you have kids they can totally help you make these and chances are likely that they will like them as well! 

5 Minute Keto No Bake Cookies

Ingredients

2 tablespoons real butter ( we use Kerrygold) 

2/3 cup all natural peanut butter (or your choice of nut butter)

1 cup unsweetened all natural shredded coconut

4 drops of vanilla stevia (or sweetener of your choice)

1 tablespoon cocoa powder 

Directions: 

In a microwave safe dish, melt butter.

Stir in peanut butter until smooth. Add cacao powder and mix in. 

Add stevia and coconut. Mix well.

Scoop 2″ spoonfuls onto a sheet pan.

Freeze for 5-10 minutes.

Store in a sealed bag and be sure to refrigerate. 

If you do not store refrigerated they will be sticky.

Low Carb & Delicious Easter Recipes

Easter is one of my favorite holidays! The reason for the holiday is amazing, it's springtime so the weather is gorgeous, it's a great reason to get together with family and friends and of course the food is amazing! 

For years we have ordered our ham from Honey Baked Ham or Whole Foods because our kids love it but we always do our own sides and desserts so today I thought I would share some of the ones we will be making this coming weekend. If you are hosting Easter dinner or you have to bring something to a party hopefully one or two of them will look good to you! 

 

Delicious Deviled Eggs With Bacon

Deviled eggs with bacon are in my opinion, amazing! If bacon isn't your thing- no big deal- ditch it!  They are still so good and great for parties!! 

Ingredients: 

  • 6 large eggs 
  • 5 slices bacon
  • 1/4 cup good mayo ( I love primal kitchen or mayo made with avocado oil) 
  • 1/2 tsp yellow mustard
  • 1/4 tsp garlic powder
  • salt and pepper

Banana Muffin Tops

Okay. First-let me tell ya this recipe isn't a keto recipe- but I don't do keto 100% of the time (which is why I supplement with ketones)  AND more than anything I am the girl who loves to share things, including recipes that I love and make me smile! This recipe is one of them! 

Let's be honest! When it comes to muffine- the top is the best part right? And hello!! These are grain free, gluten free, dairy free and refined sugar free! BAM! If you ever watch videos of me baking or cooking you know I say BAM alot! :)

 

I make these at least twice a month and they get gobbled up super quick! They are also great to put in individual zip lock bags for grab and go breakfasts or snacks! My son Logan loves that he knows healthy foods like this are always available to him! Onion & Gruyere Cheese Quiche

CARAMELIZED ONION & GRUYERE QUICHE

 This is such a great quiche recipe! I mean who can resist caramelized onions and gruyere cheese?? You can make it for brunch, lunch or breakfast. Okay maybe even dinner! And it's keto/ low carb! Woohoo! The homemade almond flour crust, sweet caramelized onions, and Gruyere cheese are an awesome combination for sure! 

Ingredients

For the crust: 

  • 1 1/2 cups almond flour
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 cup butter, melted

For the filling:

  • 1/4 cup butter
  • 1 onion, thinly sliced
  • 4 ounces Gruyére, grated
  • 6  Organic Eggs
  • 2/3 cup cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Directions for the crust:

1- Preheat the oven to 325F. In a medium bowl, whisk together the almond flour, garlic powder, and salt. Stir in the melted butter until the dough resembles coarse crumbs.

Eggs Baked In Prosciutto Baskets

These eggs baked in prosciutto baskets are easy to make and a family favorite at our home for sure! Here is the recipe! 

Ingredients

Olive oil

12 slices prosciutto 

1 cup grated Gruyère 

12 large eggs

1/4 cup heavy cream

1 teaspoon chopped thyme

1/8 teaspoon salt

1/8 teaspoon freshly ground black pepper

Directions

Preheat oven to 375ºF. Lightly grease muffin pan with oil. Place 1 slice of prosciutto in each muffin cup, being sure to fully cover bottom and sides and leaving about a 1/4" overhang on all sides. Spoon 1 heaping Tbsp. cheese into each prosciutto cup. Crack 1 egg into each, being careful not to break yolk. Drizzle 1 tsp. cream over each egg, then top with a pinch of thyme, salt, and pepper.

Bake until whites have just set, about 15 minutes. Transfer pan to a wire rack and let cool 3 minutes. Run a knife around edges of prosciutto baskets and scoop out of pan.

Serve immediately.

Mols Balls! Energy Balls Your Whole Family Will Love!

Hey Hey! 

So I am not one to brag haha but my friend Kim reminded me about my recipe for "Mol's Balls" this week and she asked that I post the recipe here! Here's the deal- they aren't 'keto' BUT neither am i all the time! These balls are so good, they are easy to make & the kids and yourself will LOVE having them in the refrigerator ready to go at all times for a quick and delicious snack!!

HOMEMADE ALMOND MILK

Making your own nut milk is so much easier than people think! And if you've ever checked out the ingredients on alot of the almond milk out there you would freak out to see that it doesn't just contain almonds.....scary right? Here is a super simple recipe you can make at home and even involve your kids if they are around! Enjoy! And if you make it and post on social media, tag me! I love to see what you guys make!

Homemade Almond Milk

Ingredients:

2 cups unsalted, raw almonds
8 cups water

 

Instructions:

1. Soak almonds in 4 cups of water for 8-12 hours
2. Discard soaking water and rinse nuts.
3. Place soaked nuts and remaining 4 cups of water in a blender.
4. Blend on high for 2 minutes
5. Strain milk through a nut bag and squeeze into a bowl. I got my nut bags from good old Amazon. If you don't have a nut bag you can use 1-2 layers of cheese cloth.
6. Add in any optional flavoring; vanilla extract, cinnamon, sugar-free chocolate syrup
