Quick & Easy Low Carb Personal Pizza

Woohoo! You're gonna love this recipe! It's soooo good, super easy, takes 20 minutes so it's awesome for busy weeknights! Oh and BONUS- it's low carb! Yeehaw!! 

 

Quick & Easy Low Carb Personal Pizza

Crust

1/3 cup mozzarella cheese, shredded

1/4 cup blanced almond flour

1/8 teaspoon garlic powder

1 large egg yolk 

A pinch of salt

 

Toppings

1 1/2 T pizza sauce, no sugar added

1/4 cup mozzarella cheese, shredded

1/4 tsp italian seasoning

Your favorite toppings like pepperoni, mushrooms, onions, peppers, fresh basil, sausage etc. 

Instructions

  • Place oven rack at the top. Preheat oven to 425F. 
  • To make the crush: In a microwave safe bowl combine mozzarella cheese, almond flour, garlic powder and salt. Stir until well blended. Microwave for 25 seconds. 
  • Knead the dough with your hands for  a minute. Add the egg yolk while the dough is still warm. Knead the dough until combined then roll into a ball. Form a disk shape like you would a hamburger. Place the dough on a baking sheet lined with a silicone sheet or parchment paper. Use your hands to press the dough into a circule 5 to 6 inches in diameter and 1/4 inch thick. *You can also use a rolling pin if you have one handy. If your dough cooled to much and it isnt forming properly, pop it into the microwave for 10 seconds. 
  • Use a fork to poke holes in several places throughout the crust before baking. 
  • Bake on the top rack for 8 to 10 minutes, until golden brown. 
  • Remove the crush from the oven and flip it over. Top the flatter side with pizza sauce then spinkle with half the cheese. Next add your toppings and sprinkle with the remaining cheese. Bake for another 3-4 minutes until the cheese is melted. 
  • Remove from oven and sprinkle with italian seasoning. 
  • Serve and enjoy!
