Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
Once you shred the zucchini use a cheesecloth to wring it out. Once all of the water is gone, you should be left with 2 cups zucchini. If you don't have a cheese cloth, a couple of paper towels also work.
In a large bowl, add zucchini, coconut flour, baking powder and eggs. Stir to combine everything.
Add cheese to a separate microwave safe bowl. Microwave for 1 minute but in 20 second intervals, stirring in between so it's nice and smooth.
Place the batter and melted cheese into a food processor ( a blender works too) and pulse until combines.
Pack mixture from food processor into a 1/3 cup measuring cup. Turn upside down onto lined baking sheet. ( you might have to shake it a bit to help it slide/ pop out.) Use one finger to create a hole in the center and then shape the bagels with your hands.
Sprinkle bgels with everything bagel seasoning.
Bake at 400 degrees for 22-25 minutes, until golden brown.
Eat straight out of the oven or store in fridge or freezer. If reheating use a toaster or oven.
