Keto Chocolate Chip Cookies

These are the best keto chocolate chip cookies. Almond flour, butter and egg guarantee a chewy texture while chocolate chips give sweetness in each bite. Yes you can do keto and have your cookies too!! Isn't that the best news. Also you don't have to do keto to drink ketones- just thought I would add that because many people wonder about it. This recipe is super easy and the cookies stay nice and soft which is always a good thing!

Ingredients

  • 3/4 cup keto-friendly sweetener like Swerve
  • 1 stick ( 1/2 cup) unsalted butter, at room temperature
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cups almond flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup sugar-free chocolate chips
  • 1/4 cup unsalted, chopped pecans ( optional) 

Instructions

Preheat your oven to 350F


Line a baking sheet with parchment paper or a silicone mat
In a bowl add keto friendly sugar with the room temperature butter. Mix by hand or with a mixer if desired.


Add in the egg and vanilla. Mix until combined.


Grab a seperate bowl and mix in the almond flour, baking soda and salt.

Stir together then add to the wet ingredients. Mix to combine.


Fold in the chocolate chips. If adding pecans, fold them in too.


Use a cookie scoop and hands to form balls.


Bake for 12-15 minutes. Check at the 12 minute mark. To ensure they are chewy and soft, don't allow them to get too brown.


Remove your keto cookies from the oven and allow to cool on the sheet for 10 minutes. Transfer to a wire rack.
