Meatless Monday Recipe: Cheesy Cauliflower Soup

Omg! This soup is SO good and I love that i can find everything at Trader Joe's!!! Woohoo! If you know me, I am a huge fan of not having to go to the regular grocery store! I love small stores and farmer's markets! It can feel too overwhelming and really- most of the time I go to our big neighborhood market i come home with way too many things that we didn't need! Does this happen to you too? So not only is this ONE POT 30 MINUTE RECIPE convenient but it is DELICIOUS and it is low in carbs!!!

Serve: 4

Prep time: 10 minutes Cook time: 20 minutes


1 T butter

1/2 onion, chopped

2 cups riced cauliflower

1 cup chicken broth

2 ounces cream cheese

1 cup heavy whipping cream

A pinch of pink himayalan salt

Fresh ground pepper

1/2 cup sharp cheddar cheese, shredded



In a medium sauce pan melt the butter over medium heat. Add the onion and cook for about 5 minutes, until it is softened. 

Add the riced cauliflower and chicken broth. Allow to come to a boil, stirring occasionally. 

Lower the heat to medium- low and simmer until the cauliflower softens ( about 10 minutes)  and can be mashed. 

Add the cream cheese and stir into the mixture. 

Add the heavy cream and purée the mixture with an immersion blender. If you need to use your blender that works too. Just pour everything into your blender, blend it and pour back into the pan and reheat it a bit) 

Season the soup with the pink salt and pepper.

Pour into two bowls and top with the sharp cheddar. 

If you want to add crumbled bacon, chopped scallions or even a little hot sauce to the top for a little kick these are delicious options! 




-If you need to use cauliflower florets that is totally fine! You will just need to simmer the mixture for a while longer before mashing it ( (about 15 minutes). 

-Feel free to use vegetable broth rather than chicken broth!
