Bacon Gruyère Egg Bites - Starbucks Copycat Recipe

Omg, are you like me and love those amazing egg bites from Starbucks. You know the ones with bacon and gruyère cheese? Aaaah I mean anything with bacon is amazing in my opinion but their egg bites are creamy and pretty much perfect. Well, I have been on a mission for quite some time to find a copy cat recipe and until yesterday I haven't been able to. 

I came across a recipe on the awesome blog thekitchn.com and well you must make them too! 

I never even thought about mixing up the egg, cream cheese, and gruyère in the blender to make it creamy. Nor did I think about cooking it in a water bath as you would do with a cheesecake. Doing so was super easy and it made the egg bites turn out creamy, not overdone which would happen if I didn't do that. Woohoo! I love cool tricks like that, don't you? Anyway- long story short- you must make these! They are so good. You will want to whip them up on Sundays and have them ready to heat up throughout the week for breakfast, brunch, or even a snack. 

Bacon Gruyère Egg Bites - Starbucks Copycat Recipe

Ingredients: 

Butter for coating the pan

9 large eggs ( I recommend pasture-raised eggs) 

3/4 cup grated Gruyère cheese

1/3 cup cream cheese ( about  2 1/2 ounces) 

1/2 tsp kosher salt

6 slices thick-cut bacon, cooked and crumbled

 

Directions: 

Heat the oven to 350 and arrange the rack to the middle. Coat an 8x8 inch pan with butter. 

Place the eggs, cream cheese, Gruyère, and salt in the blender. Mix on medium-high for about 1 minute, until super smooth. Pour into baking dish. Sprinkle with bacon. Cover tightly with aluminum foil. 

Pull oven rack halfway out. Place roasting pan on it. Add 6 cups of very hot water into the pan. Set the baking dish with egg mixture into the roasting pan. Bake for 55 minutes, until just set in the middle. 

Remove the roasting pan from the oven. Take the baking dish out of it and uncover. If you would like the top browned a bit set the oven to broil and brown for about 3 minutes. 

Cut into 9 squares or use a circle-shaped cookie cutter to make round bites. Serve. Store for up to 4 days in the refrigerator. To warm them up just microwave them for 1 minute. A whole lot faster than going down to Starbucks and a lot cheaper as well! 

ps- My mom and Kevin just had them for breakfast and LOVED them! Woohoo! I love helping people smile with good food, don't you?
