These Low Carb Jack O' Lantern Stuffed Peppers are such a fun and delicious idea to make for a party or family night in!🎃🎃🎃🎃
Ingredients:
1 T olive or avocado oil
1 medium onion, chopped
1 garlic clove, minced
1 lb lean ground beef
1 tsp salt
1/4 tsp ground black pepper
1 1/2 cups brown rice, cooked
1 8 ounce can tomato sauce, divided
2 T fresh parsley, chopped
4 large orange bell peppers
Directions:
*Preheat oven to 350 degrees.
*Heat the oil in a large skillet over medium heat. Add the garlic and onion and cook until softened and begins to brown. ( 3-5 minutes) Add beef, salt and pepper. Cook about 5 minutes, until it loses its pink color. Remove from heat. Stir in rice, 3/4 cup of the tomato sauce and the parsley.
*Cut out the stems of the bell peppers and set aside. Scoop out the seeds. With a sharp paring knife cut out your favorite jack o’lantern faces on one side of each pepper. Place the peppers and tops cut side down in a microwave safe pie plate or pan. Add 1/4 cup water. Microwave on high 4-6 minutes, until tender yet firm. Empty the water from the dish and turn the peppers cut side up.
*Stuff the peppers with the beef mixture. Spoon remaining 1/4 cup tomato sauce over the peppers. Bake 202-25 minutes, until the mixture is heated through. Place the steamed tops back on top of the peppers and enjoy!
*cauliflower rice also works great in place of brown rice
*you can always make the filling up to two days ahead then continue with the recipe!
