Over the past 10 years of running my own home business, I get this comment and question asked all the time: " Molly! What you do looks super fun but with my kids/ my job/ life I don't know if I can fit it in. How do you think I could find the time to do this?" 

I wondered the exact same thing back when my friend Monica suggested I take a look at what she was doing. I was super busy but I also knew I wanted to do something else....so I found a way and I am so happy I did.

KETO COOKBOOKS I RECOMMEND

I am not a cook by any means in fact I would rather bake than cook anyway but with the keto diet I don't mind cooking that much! Why? Because the recipes I have made so far are pretty basic, the ones I have tried have been delicious and meals my family likes and I think it's fun to try new methods! 

 

When I first starting doing the keto diet I became  little obsessed, I will admit! I ordered one book on Amazon, then two, and now I have quite an awesome collection! In fact, now you can find many at Costco at Target because keto isn't goin anywhere! Finally after being around over 100 years ( I wouldn't refer to something as a "fad" or "trend" if it's been around that long :) people are finally understanding the benefits of ketones and ketosis! That is super exciting!!! I don't do keto 365 days a year. You know those days when you're on the go and you think 'Oh no- I don't want to get hangry' so you grab whatever snacks are in your pantry and those snacks might not be the best for you...We all have those moments! So rather than stressing about it, not eating at all or choosing foods high in carbs and sugar, here is a list of 20 keto friendly snacks to have on hand so you can eat well on the go and feel awesome!
 
1. Coconut cream with fresh berries

Warm Cruciferous Crunch Slaw

Don't you love when you can whip up a super delicious healthy salad and it's all from Trader Joes?

I made this today and it was amazeballs! I wasn't in the mood for meat or anything too heavy and this TOTALLY hit the spot! I love that it's so colorful too! 

Warm Cruciferous Crunch Slaw

Ingredients:
* 1 bag of Trader Joe's "Cruciferous Crunch" mix ( this is a combo of shaved brussels sprouts, kale, green cabbage, red cabbage and broccoli)
* 2 tsp organic extra virgin olive oil
* 1/8 tsp sea salt
* the juice of 1 lemon
* organic dried cranberries
* dry toasted & sliced almonds
* shaved parmesan, romano and asiago cheese

 

 

Directions:
In a large skillet over medium high heat add olive oil. When heated, add cruciferous crunch and sauté for 3 minutes until slightly wilted.

6 TIPS TO EATING OUT SMART & FEELING GREAT

Whether you're doing strict keto, eating lower carb or just committing to Just Eating Real Food ( JERF)  , I thought I would share some quick tips to help you stay in ketosis, so you are not stressed when looking at the menu and more importantly so you feel great after eating!

1. Check out the menu before you arrive.

It always helps to be prepared. Before your night out, check out the restaurant's website and see what's on the menu. More often than not, the restaurant will have one or two dishes that either comply with the keto diet, many that are low carb or that can be altered to work for you. If you're worried about it- just give them a call beforehand to ask about accommodations. It's more normal than you think! 

2. Ask for substitutes.

MEATLOAF MUFFINS

These are SO good! I love to make them on a Sunday afternoon so that we have something to heat up quickly during the week either for lunch or dinner! They are paleo and oh so good- especially with the homemade BBQ sauce on top ( the recipe for that is below too!) 

Paleo Meatloaf Muffins

Makes 10-12 muffins

Ingredients

  • 1 tablespoon olive oil, plus more for greasing the muffin tin
  • ¾ cup finely diced onion
  • ½ cup finely diced celery
  • ½ cup finely chopped green bell pepper
  • ¼ cup tomato paste
  • 1 tablespoon ground mustard
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon finely minced fresh rosemary
  • 2 cloves garlic,  peeled and minced
  • ¼ teaspoon freshly ground black pepper
  • 1 ½ pounds ground beef or ground turkey
  • 1 large egg
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ¼ cup carrot juice
  • ¼ cup water
