Eggs Baked In Prosciutto Baskets

Mar 12, 2019

These eggs baked in prosciutto baskets are easy to make and a family favorite at our home for sure! Here is the recipe!

Olive oil

12 slices prosciutto

1 cup grated Gruyère

12 large eggs

1/4 cup heavy cream

1 teaspoon chopped thyme

1/8 teaspoon salt

1/8 teaspoon freshly ground black pepper

Preheat oven to 375ºF. Lightly grease muffin pan with oil. Place 1 slice of prosciutto in each muffin cup, being sure to fully cover bottom and sides and leaving about a 1/4" overhang on all sides. Spoon 1 heaping Tbsp. cheese into each prosciutto cup. Crack 1 egg into each, being careful not to break yolk. Drizzle 1 tsp. cream over each egg, then top with a pinch of thyme, salt, and pepper.

Bake until whites have just set, about 15 minutes. Transfer pan to a wire rack and let cool 3 minutes. Run a knife around edges of prosciutto baskets and scoop out of pan.

Serve immediately.

Making your own nut milk is so much easier than people think! And if you've ever checked out the ingredients on alot of the almond milk out there you would freak out to see that it doesn't just contain almonds.....scary right? Here is a super simple recipe you can make at home and even involve your kids if they are around! Enjoy! And if you make it and post on social media, tag me! I love to see what you guys make!

Homemade Almond Milk

2 cups unsalted, raw almonds
8 cups water

1. Soak almonds in 4 cups of water for 8-12 hours
2. Discard soaking water and rinse nuts.
3. Place soaked nuts and remaining 4 cups of water in a blender.
4. Blend on high for 2 minutes
5. Strain milk through a nut bag and squeeze into a bowl. I got my nut bags from good old Amazon. If you don't have a nut bag you can use 1-2 layers of cheese cloth.

Sometimes you want a donut and sometimes you treat yo self and get one but you feel like crap i right or am i right? That flour, sugar and grease can do a wild thing to our bodies, brains, energy, stomach and waist line dang it. So....keto donuts to the rescue!

These are so good and instead of white flour they are made with coconut sugar. Rather than white cane sugar they are made with Swerve which doesn't spike blood sugar and make us feel funky! And BONUS!! These have MCT in them which is good for our brain power y'all! Sign me up big time!

One thing you need is a donut pan which I found at Bed Bath n Beyond but I also found one on Amazon , Sur La Table & good old Target

I have a 17 year old son who loves donuts and not only did he help me make these but he thinks they are delicious! Here is the recipe! If you make them and post on social media I would love for you to tag me so I can see what you thought and give you a thumbs...

Yes you read that right....breakfast and salad in the same title! For real guys- this can be for breakfast, lunch or dinner!! It is so good, it's super easy & it's low carb!
Woohoo- don’t you love meals like this?
2 large eggs
5 ounces organic mixed greens
2 T olive or avocado oil
A dash of himalayan salt and a dash of pepper
1 avocado, thinly sliced
A handful of grape tomatoes, halved
6 slices bacon, cooked and chopped
Soft boil the eggs ( to do this, add water to a saucepan over high heat, bring to a boil, out the eggs on to softball, turn the heat down to med-high and cook for 6 min)
While the eggs are cooking toss the greens with the oil and season with s & p. Divide that between two bowls.
Top the greens with the avocado slices, grape tomatoes and bacon.
When the eggs are done, peel them , cut them in half and place two halves on top of each salad. Season with a little more s & p and serve! Enjoy!

If you read magazines, watch the news, chat with friends or see my Tesla cruising around town Orange County ;) the keto diet has become one of the hottest things happening due to all the new research showing how beneficial a low carb diet and ketones in general can be to our health. Even though it seems like a new thing or a fad to some, the ketogenic diet has actually been around for over 100 years yet we are just now learning how beneficial ketosis and ketones really are to our brains and bodies!

In short, the keto diet requires you to reduce the  carbohydrates in your diet and replace them with healthy fats. When you restrict carbs from your diet, you re-adjust your body to run off body fat and ketones as its main source of energy. By doing this low carb, high fat diet, we are seeing many health benefits like improved brain function, fat loss/ weight loss, reduced inflammation and more!

But it you're like me just the thought of cutting...

I absolutely LOVE getting texts from friends and customers who share their journey   ( or as we often call it their " better story") with me because it gets me super pumped up and excited for them!!!!!! I share about ketones because i know how awesome they are for all of us- for our brain health and overall wellness! Pure therapeutic ketones by Pruvit are backed by science, are innovative, are the category king when it comes to exogenous ketones, are patented, are the most bio-identical and they continue to improve!

You might know this already but I was the girl who was skeptical and didn't want to believe that i needed a real change!  For at least two years I stayed stuck, I continued to eat low fat, live off bars and shakes and suffer from stomach aches, crappy sleep, low energy, major brain fog and more!

Finally I had enough. I knew there had to be a better way to feel better & more alive! That's when I learned about the ketogenic diet so i dove in. I...
