What is Intermittent Fasting & The Benefits

A lot of you guys have asked me about intermittent fasting!
 
I do it most days and have done it for about a year now! I love it and now it’s just how I eat! Rather that me try to explain it I found an awesome explanation by a guy named James Clear! I hope it is helpful to you! Oh and since a lot of you have asked about my eating pattern, I wake up and have my bulletproof coffee or keto sweet kreme coffee at around 8 am. Then I have my keto/os at about 10am and my first meal of the day at noon. The keto/os totally curbs my appetite and energizes me which is AWESOME. My last meal is around 6, or maybe 7 at the latest. So I am fasting for 12 hours each day. With this whole combo I sleep better, I burn fat, I have tons of energy, I think clearer, I don’t crave foods or overeat and I just plain FEEL BETTER! :)
 
I have good news- Intermittent fasting is NOT A DIET, it's a pattern of eating. It's a way of scheduling your meals so that you get the most out of them....

DOUBLE CHOCOLATE KETO COOKIES

Okay, when you can fool your 17 year old son with these you know you are onto something good! :) Seriously, I made this and he kept saying how much he loved them. When I told him they are keto, he was in shock and told me I need to make them more often! Win Win!! 

Here is the recipe.

Double Chocolate Keto Cookies

Ingredients:

  • 2 cups organic almond meal. almond flour OR if you have a nut allergy you can substitute the almond flour with 1/2 cup coconut flour and 1 additional egg) 
  • 1/4 cup grass-fed butter 
  • 2 Tbsp collagen peptides
  • 1/4 cup cocoa powder
  • 1/2 – 3/4 cup Swerve granulated sugar
  • 1 tsp vanilla
  • 1 egg
  • 1/2 tsp baking powder
  • 1 tsp apple cider vinegar
  • 1/8 tsp salt
  • 1/3 cup Lilly's chocolate chips

Instructions:

  • Preheat the oven to 350F. Line a baking tray with parchment paper or a silicone sheet.
  • Add all your ingredients except for the chocolate chips and collagen to a bowl and mix well.

AVOCADO EGG BOWL

Y'all! This recipe is super easy, it looks pretty, it has two "genius foods" and it's low carb/ keto!! Woohoo! What an awesome combination right? Oh and it can of course be eaten for a snack, lunch or even dinner!!! 

Here is the recipe! Enjoy! 

Avocado Egg Bowl

2 organic eggs

1 ripe avocado

a pinch of salt & pepper 

2 pieces of bacon, cooked and chopped

Whisk eggs and cook to desired consistency. Season with S&P. Slice avocado in half, remove pit and fill holes as well as top of avocado with the scrambled eggs. Top with bacon. Enjoy with a side of fresh tomatoes or berries. Enjoy!

KETO BLUEBERRY LEMON MUFFINS

Oh my! These muffins are super easy to make, they are moist and packed full of blueberries and as a bonus they include collagen which is so beneficial for our hair, skin and more! Even our 17 year old son thinks they are awesome! 

Ingredients:

  • 4 eggs
  • 3/4 cup full-fat, canned coconut milk
  • 1 teaspoon pure vanilla extract
  • 2 scoops collagen powder
  • 1/2 cup coconut flour
  • 1 1/2 tablespoons swerve 
  • 1 teaspoon baking powder
  • 1/8 teaspoon pink himalayan salt
  • 3 tablespoons grass-fed unsalted butter, melted
  • 3/4 cup fresh blueberries

Frosting Ingredients:

  • 1 small lemon, zested then juiced
  • 5 tablespoons powdered swerve

 

Directions:

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, whisk eggs, coconut milk and vanilla together.
  3. Add collagen protein powder, coconut flour, swerve, baking powder, and salt and whisk until mixed well. Stir in melted butter. 
  4. Gently stir in the fresh blueberries.
  5. Spoon mixture evenly into 10-12 paper-lined muffin holders.
