I would call this a WIN!
Last night I made a delicious and easy recipe- Baked Salmon with Garlic Aioli and my 17 year old son devoured it and said "OMG Mom- this is the best salmon you have ever made!" And soooo I have to share the recipe with y'all!
Did you know a 4 oz salmon filet contains major omega 3's which promote brain health, heart health, helps protect against cancer and autoimmune diseases such as rheumatoid arthritis and lupus!
Baked Salmon with Garlic Aioli
Ingredients:
3 cloves garlic, minced
1/4 cup extra virgin olive oil
1/4 melted butter
1 T lemon juice
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried parsley
1 pound ( 4 individual) fresh salmon fillets
Directions:
1- Combine garlic, olive oil, lemon juice, salt, pepper and parsley in a mixing bowl. Place salmon in a baking dish and top with marinade. Refrigerate for 1 hour ( no more than that*see tip at and of recipe).
2- Preheat oven to 350 degrees.
3- Put salmon in oven and bake for 35 minutes or until fish flakes easily from a fork.
4- Remove from oven and top each piece of salmon with 1/8 cup of garlic aioli. ( recipe below)
Serve with veggies and or a green salad.
* Tip- watch the clock when marinating. If you leave raw fish sitting in lemon juice too long the fish will start to "cook". The citric acid in the lemon juice can actually change the proteins in the fish turning to firm and opaque like it had been cooked with heat- crazy right?
Garlic Aioli Recipe:
Makes 1 cup
Ingredients:
1 cup of homemade or really good mayonnaise
4 cloves garlic, minced
3 T olive oil
2 T fresh lemon juice
1/2 tsp salt
1/4 tsp black pepper
Directions:
1- Mix all ingredients together in a small bowl and mix until smooth!
2- Cover and refrigerate before serving!
3- Top cooked salmon and enjoy!
