1 lb large shrimp, deveined and peeled
1/3 cup pesto, either store bought or homemade
2 T unsalted butter
A pinch of garlic powder
Salt and pepper, to taste
* Equipment needed: 6 wood or metal skewers. Always soak wood skewers in water for 30 minutes before grilling them to prevent them catching fire.)
Place the shrimp and pesto in a large zip lock plastic bag or a bowl and mix well to coat. Place in the refrigerator to marinate for 30 minutes. Once marinated, thread the shrimp onto the skewers.
Preheat your grill to medium heat. Place the skewers on the grill and grill for 2-4 minutes each side. Cook until the shrimp have turned pink. Do not over cook or else they will turn out rubbery.
Place the butter and garlic powder in a small microwave safe bowl. Melt in the microwave for 15-20 seconds.
Drizzle each kabob with 1/2 T of the melted garlic butter. Season with salt and pepper to taste.
Garnish with sliced lemon slices if desired.
