Mols Balls! Energy Balls Your Whole Family Will Love!

Hey Hey! 

So I am not one to brag haha but my friend Kim reminded me about my recipe for "Mol's Balls" this week and she asked that I post the recipe here! Here's the deal- they aren't 'keto' BUT neither am i all the time! These balls are so good, they are easy to make & the kids and yourself will LOVE having them in the refrigerator ready to go at all times for a quick and delicious snack!! 

 

I usually double the recipe and put half of them in the freezer for later!

Mol's Balls ( aka Coconut Chip Energy Balls) 

Ingredients:

  • 1 cup dry oatmeal ( old fashioned oats) 
  • 2/3 cup unsweetened coconut flakes
  • 1/2 cup peanut butter ( or almond butter if you prefer it)
  • 1/2 cup ground flax seeds ( i ground them in the blender) 
  • 1/2 cup semisweet chocolate chips ( or dark chocolate) 
  • 1/3 cup honey (or agave nectar but i prefer honey myself)
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract

DIRECTIONS:

Stir everything together in a medium bowl until thoroughly mixed ( with a spoon or your hands). Cover and chill in the refrigerator for 30 minutes.

  1. Once chilled, roll into 1 inch balls
  2. Eat and enjoy!
  3. Store in an airtight container for 1 week. Or put two each in a ziplock bag for grab n go! 
  4. Makes about 20 balls.
