Homemade Chocolate Granola

Chocolate and granola- two of my favorite things!! And so why not combine them together for a grain-free keto granola so you can have something delicious for breakfast or a healthy snack! 

 

Here is the recipe! I wasn't sure if the whole family would like it since it doesn't have oats but they did!

Chocolate Granola

 

Ingredients: 

1 cup almonds

2/3 cup pecans

2/3 cup walnuts

1/2 cup hazelnuts

1/2 cup shredded unsweetened coconut

2 T raw cacao powder

2 scoops ( 1/2 cup) of your favorite protein powder ( chocolate or plain) OR an egg white protein powder

1 large egg white

1/4 cup coconut oil, butter or ghee

1/4 tsp pink Himalayan or sea salt

 

Optional: 1/4 cup granulated Swerve or 10-15 drops liquid stevia

 

Directions: 

1- Preheat oven to 300 degrees. Chop the nuts with knife or pulse in your blended until roughly chopped. 

2- Place the nuts with the protein powder, shredded coconut, Swerve ( if using), cacao powder and salt in a bowl and mix well. 

3- Add melted coconut oil ( or butter or ghee), egg whites and stevia ( if using ) 

4- Mix until well combined.

5- Spread the mixture on a baking sheet lined with parchment paper, place in the oven and bake for 20-25 minutes. Check regularly to make sure it doesn’t burn. 

6- When done, remove from the oven and let cool. Enjoy and store in an airtight container. 

 

Serve on its own or with 1/2 a cup with unsweetened almond milk, heavy whipping cream, coconut milk or sprinkle over yogurt.
