Easy Keto Pulled Pork

This is a family favorite and I LOVE that I can whip it up in the morning and have dinner ready to go without stress! When life is especially busy with my business, with holidays, with kid's activities etc it is always awesome to have recipes like this to go to!
Pulled Pork:
· Pork shoulder , boneless
· 1/3 Cup of Keto BBQ Sauce (see below)
Spices for rubbing: (I doubled everything because of the size roast I bought)
· 2 tsp salt (I use pink Himalayan salt)
· 1/2 tsp black or white pepper

Mix spices together

Chop onion and throw onion and Bay leaves at bottom of crock pot. I also added 3 sliced garlic cloves

Score the roast and rub with seasoning

Add to crockpot and cook on low 10 hours

Preheat Oven to 400
-
Add BBQ to Pork (see below for recipe mix)

Cook in over 30 mins to crisp up some of the meat

Take excess juices from crockpot and add to blender

Remove meat and shred with two forks
-
Add in the juices from the blender to the shredded pork and mix.
I recommend doubling or tripling this so you have extra for later ;)
Ingredients:

½ cup reduced sugar ketchup
-
1 tablespoon Louisiana Hot Sauce
-
2 teaspoons yellow mustard
-
1 teaspoon liquid smoke
-
1 teaspoon Worcestershire sauce
-
½ teaspoon garlic powder
-
½ teaspoon onion powder
-
½ teaspoon chili powder
-
½ teaspoon cayenne pepper
-
½ teaspoon cumin
-
Directions:

Throw it all in a bowl and mix well.

4 pieces bacon (reserve bacon grease)

1/3 cup mayonnaise
-
1 tbsp dijon mustard
-
2 tablespoons apple cider vinegar
-
1 teaspoon salt
-
1/4 to 1/2 teaspoon pepper to taste

1/2 cup cheddar cheese
-
8 oz coleslaw mix
-
3 heaped tablespoons green onions (chopped)

Cook bacon , set aside
-
Mix mayo, Dijon, apple cider vinegar and salt and pepper together

Add coleslaw mix and stir together.

Toss in cheese, green onion and 2 pieces of chopped bacon
-
Mix together again.
*if you don't do bacon you can always ditch it and it's still delish!
Serve everything on keto buns, on a bed of lettuce or in lettuce cups!
