Banana Muffin Tops

Okay. First-let me tell ya this recipe isn't a keto recipe- but I don't do keto 100% of the time (which is why I supplement with ketones)  AND more than anything I am the girl who loves to share things, including recipes that I love and make me smile! This recipe is one of them! 

Let's be honest! When it comes to muffine- the top is the best part right? And hello!! These are grain free, gluten free, dairy free and refined sugar free! BAM! If you ever watch videos of me baking or cooking you know I say BAM alot! :)

 

I make these at least twice a month and they get gobbled up super quick! They are also great to put in individual zip lock bags for grab and go breakfasts or snacks! My son Logan loves that he knows healthy foods like this are always available to him! Since I shared that I made these this past week and so many of you contacted me and asked that i shared the recipe I am finally doing so! Woohoo!

Banana Muffin Tops

Ingredients: 

2 ripe bananas 

4 T maple syrup

1/2 cup almond flour

1/2 cup coconut flour

1 T coconut oil ( melted and then cooled) 

4 T creamy almond butter ( or peanut butter works too) 

2 eggs ( beaten) 

1/2 tsp baking powder

1 tsp baking soda

1/4 tsp salt

1/2 cup chocolate or dark chocolate chips ( optional- i didn't use them when I took this picture  but it's super yummy this way too) 

Directions: 

Preheat oven to 350 degrees.

Mash the bananas

In a large bowl cream the mashed bananas with the eggs, maple syrup, coconut oil and almond butter. 

In a separate bowl whisk together the almond flour, coconut flour, baking powder, baking soda and salt. 

Combine dry ingredients with wet ingredients. 

Fold in the chocolate chips if using. 

Lightly grease a cookie sheet and use a large cookie scoop/ ice cream scoop to form four muffin tops. I got this one at Amazon and it was great!

                                                     

If desired, place some extra chocolate chips on top.

Bake for 15-20 minutes- until the edges are a nice golden brown.
