Crockpot Low Carb Lasagna

Omg you know when you find an awesome recipe that changes your life?

Okay maybe not changes your life but you get super excited about it? This one did that for me! It's low carb, it's meatless which we try to do at our house at least one dinner a week AND you can do it in your crockpot which is always a game-changer! It got this recipe from Well Plated and I had to share it with you! 

Ingredients: 

2 medium zucchini

1 medium eggplant

kosher salt

16 ounces good-quality store-bought tomato sauce 

1 medium red onion

1 red bell pepper diced

16 ounces low fat cottage cheese ( don't use skim) 

2 large eggs

8 ounces part-skim shredded mozzarella cheese ( or provolone or a combo of both) 

Instructions: 

With a mandoline or sharp knife, slice the eggplant and zucchini lengthwise into long thin 1/4 inch sections so they resemble lasagna noodles. 

Spread those "noodles" onto a paper towel and sprinkle with kosher salt. Let stand for 15 minutes...

Keto Chili

It's super chilly here in southern California so my first thought was "KETO CHILI is happening for dinner!"

 This recipe is SO good!!! And the leftovers are great the next day in an egg scramble! 

Keto Chili

Ingredients
1 LB Ground Beef
1 LB Ground Sausage (regular or hot depending on preference)
1 Medium Green Bell Pepper, chopped
1/2 Medium Yellow Onion, chopped
1 can of Diced Tomatoes (14.5oz)
1 can Tomato Paste (6oz)
1 T Chili Powder
1/2 T Ground Cumin
3-4 Garlic Cloves, minced ( or if you don’t have garlic use 1 T garlic powder)
1/3 Cup of Water


Instructions
Brown the sausage and ground beef together.
Drain the fat.
Place the cooked sausage and ground beef into the crockpot.
Add all other ingredients into the crockpot and mix well. If you saved half of the fat, add that now too and mix well.
Place the lid on the crockpot, set on low, and cook for 6-8 hours.
Once it is done and it is time to eat, use toppings like sour cream, cheese, and green or red onions.

Easy Ways to Eat Low Carb

Reducing your carbohydrate intake can have many health benefits like reducing your appetite, reducing blood sugar and insulin levels, lowing blood pressure, and losing weight. 

Here are some easy ways to live a low carb lifestyle: 

  • Cut back on bread. Thankfully there are a lot of easy ways to substitute it. ( lettuce-wrapped sandwiches & burgers, burrito bowls, cauliflower rice, and more) 
  • Eliminate sugary drinks like soda, sweetened tea & frothy coffee drinks. They are both high in carbs and sugar. 
  • Buy and make snacks that are low carb. Some of my favorites include a handful of macadamia nuts, almonds, cheese, walnuts, and peanuts.
  • When out to eat, ask for non-starchy veggies ( like broccoli, asparagus, or spinach)  in place of potatoes, pasta, fries, and bread. Those starches have a lot of carbs. And not only are veggies better for you they are super tasty! 
  • Cook with healthy fats like coconut oil and extra virgin olive oil.

Low Carb & Super Delicious Pumpkin Bread

If you are over baking banana bread like me and you want to bake something that tastes like fall AND is low carb then you must bake this super easy and absolutely delicious low carb pumpkin bread. 

One of my bestest ( yes bestest ) girlfriends Stef sent me home with a loaf last week and Kevin and I LOVED it. And the funny thing is Kevin doesn't even like pumpkin desserts but he totally enjoyed it. She is amazing and shared the recipe with me and of course, I need to pay it forward to you!

I don't know about you but I have a lot hate relationship with the phrase "meal prep". I love it because I know it's amazing and makes the week of eating so much easier. I hate it because I know I should do it more often. Don't you just love getting home after a long day knowing there is something delicious waiting in the refrigerator for you or having something healthy and yummy to take to work with you for lunch? Taking some time one day a week to prep foods and meals is magical.

Morning Smoothies to Kickstart Your Day

This summer my husband and I got back to enjoying morning smoothies! Yes I do intermittent fasting from time to time because it's awesome but this summer my body craved healthy fruits and veggies in a big way so I answered it with morning smoothies! 

Morning smoothies are not only delish but they are also a delicious alternative that ensures that you are getting loads of naturally occurring vitamins, minerals, and antioxidants. Plus, you gotta love that smoothies retain all the filling, gut-friendly fiber from fruits and veggies.#winwin

How to spend time alone & have fun!

Omg! I did it! 

I spent 9 days without my better half! For real- I am super proud of myself and I had to share about it with you as well as give you a bunch of fun things you can do alone if your partner is on a trip or if you're just plain sick of other humans! Haha! 

Months ago when Kevin got invited to go on a guys only surf trip to Fiji I immediately said YESSSS YOU MUST GO! We love taking trips together but we also fully support one another in taking trips with our best guy and girlfriends so this was a no brainer- I mean Fiji? Ya just cant pass that up! 

As the date got closer i started to sort of panic! I was thinking omg I think I have gone three days maybe five without my husband but 9 nights alone- wow- thats a long time! I had a mixture of anxiety and also excitement.

Kevin had an AMAZING trip and woohoo he gets home tomorrow! To my surprise I really enjoyed my time alone and doing many things solo! Did i get a little lonely without him? Of course I did,...
