Chocolate and granola- two of my favorite things!! And so why not combine them together for a grain-free keto granola so you can have something delicious for breakfast or a healthy snack!
Here is the recipe! I wasn't sure if the whole family would like it since it doesn't have oats but they did!
Ingredients:
1 cup almonds
2/3 cup pecans
2/3 cup walnuts
1/2 cup hazelnuts
1/2 cup shredded unsweetened coconut
2 T raw cacao powder
2 scoops ( 1/2 cup) of your favorite protein powder ( chocolate or plain) OR an egg white protein powder
1 large egg white
1/4 cup coconut oil, butter or ghee
1/4 tsp pink Himalayan or sea salt
Optional: 1/4 cup granulated Swerve or 10-15 drops liquid stevia

Have you ever made shakshuka? Shakshuka is a dish consisting of eggs poached in a spicy sauce of tomatoes and other vegetables. OMG it is so good, low carb and it's easy to make! Kevin & I made this recipe last weekend and loved every bite so I had to share it with YOU!! Happy low carb cooking! Oh and guess what? Shakshuka is awesome for breakfast or even dinner! These Low Carb Jack O' Lantern Stuffed Peppers are such a fun and delicious idea to make for a party or family night in!
Ingredients:
1 T olive or avocado oil
1 medium onion, chopped
1 garlic clove, minced
1 lb lean ground beef
1 tsp salt
1/4 tsp ground black pepper
1 1/2 cups brown rice, cooked
1 8 ounce can tomato sauce, divided
2 T fresh parsley, chopped
4 large orange bell peppers
Directions:
*Preheat oven to 350 degrees.
*Heat the oil in a large skillet over medium heat. Add the garlic and onion and cook until softened and begins to brown. ( 3-5 minutes) Add beef, salt and pepper. Cook about 5 minutes, until it loses its pink color. Remove from heat. Stir in rice, 3/4 cup of the tomato sauce and the parsley.

Ingredients:
4-6 chicken breasts, cooked and shredded
1 jar of your favorite low- carb marinara sauce
2 cups mozzarella cheese, shredded
Pizza toppings of your choice ( pepperoni, italian seasonings, italian sausage, banana peppers, red or green peppers, red onion, etc)
Instructions:
Preheat the oven to 400 degrees F.
Season, cook and shred the chicken.
Spray a 9x13 inch pan with cooking spray.
Place the shredded chicken in the dish.
Pour the marinara sauce over the chicken and stir to combine.
Sprinkle 1 cup of the cheese over the chicken and sauce.
Add your favorite pizza toppings.
Rop with remaining cheese.
Bake for 30 minutes or until the cheese is melted and slightly golden.
